My Mother's Experience with Calories don't count.

In 1961 I was thirteen years old, when my mom purchased the extremely controversial book: 'Calories don't count' and the diet industry was reacting exactly the same way about it as they did when the Atkins diet was published. In other words the diet counselors were reacting with horror at the very idea that you did not have to count calories to lose weight! My mom had tried counting calories and many other diets, but this one advocated less carbs, and no sugar and downing up to four ounces of safflower oil every day. I can remember my mom standing in the kitchen downing a shot glass of safflower oil before every meal, and the look on her face each time she did this. She stayed with this diet and dropped forty pounds in no time. She never gained it back. Mom's method wasn't exactly the way Doctor Taller said to take it. He recommended that you spread the oil out throughout the day by cooking with it and adding some to vegetables. Mom did it her way and it worked for her. The book is packed with lots of health information. I still have the book and it is time for me to give Dr. Taller's method a try. Hope this helps whoever is reading this.

My first low carb diet was the year this book was published

I was a pudgy 15-year-old with at least 30 pounds to lose. My mother bought this book for me and I followed it pretty religiously. Not only did I take off the weight, going from an 18 to a 10, but my skin and hair were beautiful! The advice Dr. Taller gave was so ahead of its time. Isn't all that safflower oil, reduced carbs and all of it, much like a Mediterranean/Atkins approach today? I would really recommend this, because it seemed less strict than some of the diets today but for a young teen so very healthy.

Melts Fat FAST & Efficiently!

Well aware of the controversy surrounding this diet (and some of it is legit), I'll share with you my personal experience and what I've learned.
FIRST, MY BROTHER
I became interested in Calories Don't Count when my brother, who'd been large since childhood, applied this diet and slimmed down to a completely normal weight for the first time in his life. I still remember the financial struggle he endured, as none of his clothes fit after such a drastic size reduction, and he had to accquire an entirely new wardrobe. Remarkably, however, his skin did not hang loose, as would be expected. The reason for this, I later learned, is the safflower oil. The 3-4 ounces that one consumes daily on this diet keeps the skin very elastic, allowing it to shrink gracefully, a feat that the epidermis often cannot perform on low-fat diets.
THEN ME
So, overweight myself, I took the plunge. I had been a long-time sugar and carbohydrate addict, so the first few days were tough, and I had to push through some ferocious junk food cravings. By day five, I felt fantastic. No more cravings, increased energy, even sharper vision. (I later learned that eliminating sugar and refined carbs heals blood sugar stress, which can cause blurry vision.) Drinking an ounce of oil before each meal and keeping carbs restricted to 65 or less per day, as Dr. Taller prescribes in this book, I lost nearly a pound per day. Some days would pass during which I didn't lose anything, but most mornings I would step on the scale to find myself a pound (or close to that) lighter. That proved to be the greatest motivation!
WHAT TO EXPECT
While low-carbing is inherently more efficient than going low-fat, the safflower oil speeds up this process even more. It softens ("melts") hardened fat, allowing it to be excreted through the kidneys via the urine. This is a very different molecular process than mainstream weight reduction methods, where fat molecules merely shrink. And on this diet, lost fat tends to stay off-- unless those toxic old eating habits are reintroduced. The 60 pounds I shed have not returned.
A FEW BENEFITS OF SAFFLOWER OIL
I encourage everyone interested to do a web search on safflower oil. Just a few of the listed benefits, in addition to fat reduction, are lowered blood pressure, improved regulation of blood sugar, and improved skin & hair vitality. The linolenic and linoleic acids in safflower oil seem to prevent hardening of the arteries (atherosclerosis), by reducing cholesterol. Fat in the arteries is melted and excreted, just like fat under the skin.
THE NEGATIVE MYTH ABOUT SPEEDY FAT REDUCTION
Contrary to mainstream belief, I'm not at all concerned about rapid weight loss, if the dieter uses wisdom in his/her food choices and FEELS GOOD. Continually monitoring the body's feelings and progress is paramount. A metabolically efficient diet like this slims a person fast because it CAN. And while exercise boosts metabolism and increases overall health, some people simply cannot exercise due to their size and/or painful joints. My brother was one of these people. Yet, following the Taller diet, he consistently lost weight. As he grew lighter and his energy increased, he become active again. This naturally occurs when one feels better. Low-fat diets, on the other hand, tend to REQUIRE exercise in order to "help" the weight-loss process along.
ONE PRECAUTION, HOWEVER
Safflower oil's singular danger is it's high omega-6 content. In normal, small amounts, this wouldn't matter. But because we're consuming large quantities of safflower oil, we set ourselves up for inflammatory issues, including cardiovascular disease. So the very oil that can help our heart can also damage it. It is therefore crucial that one's omega-3 intake be adequate to help balance out this deficiency. In addition to consuming foods rich in omega-3s, it's wise to seek nutritional advice for a quality omega-3 supplement. Remember, too, that one should always check in with their doctor prior to and during the journey of any weight loss program. Because each individual's metabolism is different, your doctor should monitor your progress and health stats along the way to ensure that your body is handling said diet adequately.
